Jugged Hare is a deliciously rich dish, only available from August to February to protect the hare during breeding season, that showcases some of the best classic game dishes.
Jugging is a traditional process, dating back to the 18th-century, of slowly stewing whole animals in a casserole or earthenware jug.
Richer, darker and stronger in flavour than rabbit, there is nothing better than a comforting, hearty bowl of tender jugged hare washed down with a beautiful full bodied red wine.
