Looking for that perfect crust on your meat? Always pat dry your protein, season with your choice of seasonings and place in the refrigerator overnight – uncovered. This helps dry out the surface as the salt will draw out moisture from the meat due to osmosis, if you allow it enough time, the moisture will eventually go back into the meat and create a beautiful brine — this tenderizes your protein and locks in the seasoning which creates the perfect crust.????
