Credit to @cyrilherve The laminated ice cream sandwich
One of the many recipes developed with the boys @vincent_fogaroli @sebskitchens @wouter_thebaker for this year’s edition of Taste Tomorrow.
This one is a laminated bicolor bun, croissant dough with macerated sugar (special cocktail of Rhum, amaretto and Vanilla) with dark chocolate bicolor, glazed with Vanilla syrup.
Inside we have one thick slice of Vanilla and dark chocolate straciatella (Belcolade Origin Vietnam 73% #CacaoTrace) prepared by @dekokludo topped with a rich and buttery salted caramel.
A different way to fill viennoiserie on the go or another way to pimp your icecream, or just another excuse to eat either…
There is no such thing as too much croissants… even too much is not enough!
