Stunning rack of lamb from @owentaylorbutchers seasoned with salt and pepper, seared in a hot pan then roasted in the oven and finished in a pan of foaming butter with rosemary. I braised the endive in orange juice until tender and finished in a pan to char it.

I made the potato pave the day before by slicing potatoes really thinly before layering them up with butter which I infused with garlic and thyme. Cooked on 150° until tender then pressed over night. I finished the dish off with a Mint jus with a squeeze of lemon juice and some nasturtium leaves.
