The pork belly has been braised with warm spices and chilis, cooled, pressed, and then seared before being glazed with a subtle sweet and spicy glaze. Mole with a twist using blackberry and onion tanglers to thicken it instead of your traditional tortilla. Finally topped with winter truffle to bring a nice earthiness, crispy sunchoke, and delicious ready to use Onion Tanglers. Crunch is king!
