This lamb shoulder was the one. It spent 14hrs in the @anovaculinary Sous Vide with a yoghurty turmeric marinade and was finished on the Barbecue for a nice crust and smoke. The sauce was inspired by an authentic lamb curry recipe I found in the depths of the Indian internet, and toyed with because I just can’t help it. Sorry. Thinned out to a more French-style consistency, to be plated almost as a big-flavoured jus, which contrasted nicely against the cold and fresh raita. I also really enjoyed making the Bombay-style lamb fat potato terrine. Wish I’d made a bit more of this element.
