Credit to @kalememaybe Preserved Lemon Ricotta Toast with Herby Yellow Squash Hash and Poached Egg! Because I REALLY cannot get enough of squash this year.
This is made with toasted sourdough and @kitehillfoods almond milk ricotta that had some preserved lemon brine mixed in (I also have my own plant based ricotta recipe on my blog that I highly recommend!!).
Then I sautéed onions and yellow squash with salt, pepper, dried oregano, and aleppo pepper, and then at the end mixed in some chopped preserved lemon. Finished off with a poached egg and some fresh basil!
