Credit to @livefirerepublic Freshly-harvested sockeye salmon laid atop cast iron and prepared to tender, flake from the bone perfection over a smoldering bed of hardwood embers and live fire!! This beautiful filet was trimmed, removed of its pin bones, brushed in olive oil, then rubbed in an earthy blend of chipotle peppers and smoked paprika, toasted cumin, roasted garlic, and granulated wildflower honey, kosher salt and plenty of coarsley ground black peppercorn, before finishing in an amber maple glaze.
