1/3 cup sago (aka tapioca pearls) soaked for 1 hour
1 canned evaporated oat milk @naturescharm

In a large pot, bring about 5 cups water to a boil add the soaked sago and cook until its soft and translucent.
Drain water in strainer and wash it under running tap water. Transfer sago to a bowl, add evaporated oat milk and mix well.

Mango layer
2 cups fresh mango purée
1/4 cup Coconut milk @naturescharm
1 tsp agar agar powder

Add mango purée and coconut milk to a saucepan, bring up to a boil. Whisk in agar powder. Continue to simmer for 1 min. Pour mongo into jars. Refrigerate until set.

Passion fruit Jelly
6 passion fruit pulp
1/2 cup water
15g sugar of choice
1 tsp agar agar powder

Add water, sugar and passion fruit to a saucepan, bring up to a boil. Add agar powder, and cook until dissolved, whisking constantly, continue to simmer for 1 minute. Turn off the heat. Pour jelly into food container, refrigerate until set. ⁣

To assemble, divide sago into jars, keep refrigerated. When it’s ready to serve, garnish with passion fruit jelly. Enjoy.
