Eggs Benedict with crab meat mixed with mayo, lumpfish caviar and fresh spinach. A wonderful winter breakfast.

Hollandaise Sauce
3 large egg yolks
2 Tbsp freshly squeezed lemon juice
1 cup clarified butter melted
1/4 tsp salt
Crab Mixture
3 sticks cooked crabmeat
1 tbsp chopped fresh chives
1/2 tsp freshly ground black pepper
Fresh lemon juice
1 tsp mayonnaise
1 tsp lumpfish caviar
