Credit to @theartfulplate Harissa cod curry with spinach and mushrooms.
Ingredients:
Rose harissa paste, I used @belazu_co
1 onion diced
5/6 garlic cloves crushed
1 tspn turmeric
1 tspn mild curry powder
1 can coconut milk
Cod fillets, I used @tescofood cod loins
Handful spinach
Handful mushrooms
1/2 tspn capers
Handful baby tomatoes
Method:
Saute the onions in a little oil until softened and translucent. Add the garlic and cook for a minute. Add half a jar @belazu rose harissa, your spices and cook for around 8 mins until fragrant.
Add the coconut milk and whatever veg you want to use, the capers and cook for a further 8 to 10 mins until the sauce thickens and all the flavours are combined. Season to taste.
Season your fish with salt and pepper and place into the curry sauce. Turn the heat to medium and let the cod cook gently for around 12 mins or until tender. Serve with rice and enjoy.
