Credit to @tommybanks New Lamb main course for @blackswan_oldstead @kevinbrownchef @callumlesliechef Saddle of Salt aged Lamb from @randjyorkshiresfinest the skin is packed in sat overnight before being roasted in the bone. Neck fillet is braised and the sweetbreads are stuffed with wild garlic butter and lamb fat. The sauce is finished with two year old pickled wild garlic seeds and we finish the dish with @spilman_farming Asparagus and a wild garlic and nettle salsa. Only 3 more weeks ????‍? #blackswanoldstead
