When working with such incredible ingredients, I am often tempted to keep them raw, allowing for the quality of the produce to really speak for themselves. This stunning @lochduartsalmon is a serious winner; buttery, delicate but so so flavourful. Diced, dressed in a little white soy and served with a sprinkling of nori flakes, katsuobushi and a soy-cured @cacklebean_eggs yolk. The dish is brought together with a simple dressing made using @wasabigrowersuk sanbaizu and sesame oil. The best part about this dish is breaking that gloriously rich egg yolk into the buttery salmon and scooping it up onto crispy tapioca crackers.
