Such an amazing under utilised and underappreciated protein. Unfortunately I think alot of the scepticism towards eating roo, comes from how awful it is to eat when not cooked correctly. Lean, low in fat, high in iron and sustainable! I’ve been using more and more over the years in Singapore, not just because I love it, though because it sells well and guests are very receptive of it which is heartwarming.
